- 1 medium sweet potato, roasted and mashed
- 1 (15 oz) can black beans, drained and rinsed
- 1/2 cup breadcrumbs (use gluten-free if desired)
- 1/4 cup finely chopped onion
- 1/4 cup chopped cilantro
- 1 clove garlic, minced
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- Olive oil, for cooking
- Optional Toppings:
- Sliced tomato
- Red onion rings
- Lettuce leaves
- Toasted burger buns
- Chipotle mayo or your favorite sauce
Instructions
- In a large bowl, mash black beans with a fork, leaving some texture. Add mashed sweet potato, breadcrumbs, onion, cilantro, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into 4 patties. Chill in the fridge for 15–20 minutes to help them firm up.
- Heat a bit of olive oil in a skillet over medium heat. Cook the patties for 4–5 minutes per side, until browned and crispy.
- Serve on toasted buns with lettuce, tomato, red onion, and a generous drizzle of chipotle mayo.
Notes
- For a gluten-free option, use gluten-free breadcrumbs or oat flour in place of regular breadcrumbs.
- These burgers can also be grilled for a smoky flavor. Just brush with a little oil before grilling.
- If you like extra spice, add some chopped jalapeños to the patty mixture.
