Yellow Squash:

Diced Tomatoes with Green Chilies:
- 1 can diced tomatoes with green chilies, drained
Sour Cream or Greek Yogurt:
- 1/2 cup sour cream or Greek yogurt
Spices:
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
Cheddar Cheese:
- 1 1/2 cups shredded cheddar cheese
Instructions
- Preheat oven: Preheat oven to 375°F (190°C).
- Prepare squash: Steam or boil the squash slices for 5 minutes until slightly tender, then drain well.
- Mix ingredients: In a bowl, mix squash with onion, tomatoes, sour cream, cumin, chili powder, salt, and pepper.
