Instructions
- Preheat Oven and Prepare Mix: Preheat your oven to 250°F (120°C) and line baking sheets with parchment paper. In a large heatproof bowl, combine the Chex cereal and your chosen nuts, mixing them together to prepare for the toffee coating.
- Make Toffee Coating: In a medium saucepan over medium-high heat, melt unsalted butter along with brown sugar and light corn syrup. Allow it to boil for about 5 minutes without stirring until the mixture bubbles thoroughly.
- Add Flavor and Leavening: Remove the saucepan from heat and immediately whisk in vanilla extract, fine salt, and baking soda. The mixture will foam up, creating a luscious airy texture.
- Coat Mix with Toffee: Quickly pour the foaming toffee over the cereal and nuts. Use a silicone spatula to fold and toss everything together until all pieces are evenly coated with the shiny toffee.
- Bake the Mixture: Spread the coated mixture evenly on prepared baking sheets. Bake in the oven for 45 to 60 minutes, stirring every 15 minutes to ensure even drying and a beautiful golden color.
