  • 1 pound roast beef, cooked, shredded or chopped into bite-size pieces
  • 34 potatoes, baked or boiled, peeled and cubed
  • Salt and pepper, to taste
  • 2 pie crusts, purchased or homemade
  • Butter, melted (for brushing)

Beef Gravy

  • Drippings from beef roast
  • 1 to 2 cups water
  • 2 teaspoons beef bouillon
  • 2 tablespoons corn starch, mixed with ¼ cup water
  • Salt and pepper, to taste

Instructions

  1. Cook the roast beef: Prepare the roast beef by your preferred method: crockpot, oven roasting, or Instant Pot as detailed in the notes. Once cooked, shred or chop the beef into bite-sized pieces.
  2. Prepare the potatoes: Peel and cube the potatoes, then boil or bake them until tender. Drain and allow to cool slightly.
  3. Preheat the oven: Set your oven to 450°F (232°C) to prepare for baking the pasties.
  4. Mix the filling: In a large bowl, combine the shredded beef, cubed potatoes, salt, and pepper. Mix gently to evenly distribute the seasoning.
  5. Assemble the pasties: Unroll the pie crusts and cut each into halves to create four pieces. Place a generous amount of the beef and potato filling in the center of each crust piece, then fold over and seal the edges firmly to form a pasty shape.
  6. Prepare for baking: Place each pasty on a greased cookie sheet. Make a couple of small slits on the top of each pasty to allow steam to escape during baking.
  7. Bake the pasties: Bake in the preheated oven for 15 to 20 minutes or until the crust turns golden brown and flaky. Remove from the oven and brush the tops with melted butter to enhance flavor and add shine.
  8. Make the beef gravy: Using the drippings from the beef roast, combine with 1 to 2 cups of water and beef bouillon in a saucepan. Bring to a boil while stirring constantly. Add the cornstarch mixture gradually to thicken the gravy, continuing to whisk until it reaches desired consistency. Season with salt and pepper to taste.
  9. Serve: Serve the hot pasties drizzled or dipped in the rich beef gravy for a delicious traditional Irish meal.

  • The roast beef can be prepared in multiple ways: crockpot method takes 3-4 hours on high or 8 hours on low with seasonings; oven roasting takes about 3 hours; Instant Pot method reduces cooking time to approximately 1.5 hours.
