Vegetable Soup:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1/2 cup orzo pasta
- Salt, pepper, and chopped parsley to taste
Instructions
- Sauté onion, carrots, and celery in oil until softened. Add garlic, cook 1 min.
- Stir in tomatoes and broth; bring to a boil.
- Add orzo, simmer until tender (8–10 min).
