For the Berry Filling:
- 2 cups blueberries
- 1 cup blackberries
- 1 cup raspberries
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 6 tbsp cold unsalted butter, cubed
- 1/2 cup buttermilk
- 1 tsp vanilla extract
To Serve:
- Vanilla bean ice cream (optional, but highly recommended)
Instructions
- Preheat oven to 375°F (190°C). Toss berries, sugar, cornstarch, lemon juice, and vanilla. Transfer to a buttered 8-inch baking dish.
- In another bowl, whisk flour, sugar, baking powder, baking soda, and salt. Cut in butter until crumbly. Stir in buttermilk and vanilla. Do not overmix.
- Drop spoonfuls of dough over berries. Bake for 35–40 minutes until golden and bubbly.
- Allow to cool before serving. Top with vanilla ice cream.

- You can use a mix of your favorite berries for a personalized touch.
- Adjust sugar according to the sweetness of the berries.
- Serve leftovers reheated with a dollop of whipped cream.
