For the Berry Filling:

  • 2 cups blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp cold unsalted butter, cubed
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract

To Serve:

  • Vanilla bean ice cream (optional, but highly recommended)

Instructions

  1. Preheat oven to 375°F (190°C). Toss berries, sugar, cornstarch, lemon juice, and vanilla. Transfer to a buttered 8-inch baking dish.
  2. In another bowl, whisk flour, sugar, baking powder, baking soda, and salt. Cut in butter until crumbly. Stir in buttermilk and vanilla. Do not overmix.
  3. Drop spoonfuls of dough over berries. Bake for 35–40 minutes until golden and bubbly.
  4. Allow to cool before serving. Top with vanilla ice cream.

Notes

  • You can use a mix of your favorite berries for a personalized touch.
  • Adjust sugar according to the sweetness of the berries.
  • Serve leftovers reheated with a dollop of whipped cream.
