Description

Ingredients

  • 1 box vanilla cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • Green gel food coloring
  • 1/2 tsp watermelon extract (optional)
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp milk
  • Pink gel food coloring
  • 1/2 tsp vanilla or watermelon extract
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with green cupcake liners.
  2. Prepare the cake mix according to package instructions, adding watermelon extract and green food coloring until desired shade is reached.
  3. Fill each cupcake liner 2/3 full and bake for 18–20 minutes, or until a toothpick comes out clean. Cool completely.
  4. For the frosting, beat butter until light and fluffy. Add powdered sugar gradually.
  5. Mix in milk, extract, and pink food coloring. Beat until smooth and pipeable.
  6. Pipe pink frosting on each cooled cupcake and sprinkle with mini chocolate chips to resemble watermelon seeds.
