- 3/4 cup sugar
- 2 large eggs

- 1 1/2 cups grated zucchini
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Prepare Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Mix Wet Ingredients: In another bowl, beat oil, sugar, eggs, and vanilla until well combined.
- Combine Ingredients: Stir dry ingredients into wet mixture until just combined. Fold in grated zucchini.
- Bake: Pour batter into prepared pan and smooth top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
