Main Muffin Ingredients:
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup butter, melted
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 2 eggs
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla extract
- 1 cup grated zucchini
Streusel Topping:
- 1/4 cup brown sugar
- 1/4 cup flour
- 2 tbsp butter, cold
- 1/2 tsp cinnamon
Optional Glaze:
- 1/2 cup powdered sugar
- 1–2 tsp milk
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, whisk flours, baking soda, baking powder, salt, and cinnamon.
- In another bowl, mix melted butter, sugars, eggs, yogurt, and vanilla. Stir in zucchini.
- Combine wet and dry ingredients until just mixed.
- Spoon batter into muffin cups, filling about 3/4 full.
- For streusel: mix brown sugar, flour, cinnamon, and cold butter with a fork until crumbly. Sprinkle on top of muffins.
- Bake 18–20 minutes or until toothpick comes out clean. Cool, then drizzle with optional glaze.
