Zucchini Roll-Ups:
- 2 medium zucchinis, sliced lengthwise into thin ribbons
Ricotta Filling:
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan
- 1 clove garlic, minced
- 1 tablespoon fresh basil, chopped
- 1/2 teaspoon chili flakes (optional)
- Salt and pepper to taste
- 1 cup marinara sauce
- Extra basil leaves for garnish
Instructions
- Preheat oven: Preheat oven to 375°F (190°C).
- Slice zucchinis: Thinly slice zucchinis lengthwise and salt them to release moisture.
- Prepare ricotta filling: Mix ricotta, Parmesan, garlic, basil, chili flakes, salt, and pepper in a bowl.
- Fill and roll: Spread ricotta filling on zucchini ribbons, roll them up, and place in a baking dish with marinara sauce.
- Bake: Bake uncovered for 20 minutes.
- Garnish and serve: Garnish with basil leaves and serve warm.
