Description

This Authentic Cajun Gumbo recipe is a hearty and flavorful dish that’s perfect for bringing a taste of Louisiana to your dinner table. With a rich roux, tender chicken, spicy andouille sausage, and a blend of aromatic vegetables and spices, this gumbo is a comforting family favorite.

Ingredients

Scale

For the Roux:

  • 0.75 cup all-purpose flour
  • 0.75 cup vegetable oil

For the Gumbo:

  • 1.5 lb chicken thighs (boneless, skinless)
  • 1 lb andouille sausage (sliced)
  • 1 large yellow onion (chopped)
  • 1 whole green bell pepper (chopped)
  • 2 celery stalks (chopped)
  • 4 cloves garlic (minced)
  • 6 cups chicken stock
  • 2 tbsp Cajun seasoning
  • 2 bay leaves
  • 2 tsp Worcestershire sauce
  • Salt and black pepper to taste
  • 0.25 cup green onions (chopped, for garnish)
  • 2 tbsp parsley (chopped, for garnish)
  • Cooked white rice (for serving)

Instructions

  1. Prepare the Roux: In a heavy pot, combine the flour and vegetable oil. Stir constantly over medium heat for 25-30 minutes until the roux is a rich, dark brown.
  2. Sauté Vegetables and Meat: Add the onion, bell pepper, and celery. Cook until softened. Add garlic, sausage, and chicken. Brown the meat and season with Cajun seasoning, bay leaves, Worcestershire sauce, salt, and pepper.
  3. Add Broth and Simmer: Slowly stir in chicken stock. Bring to a boil, then simmer for 45-60 minutes.
  4. Serve: Remove bay leaves and ladle gumbo over rice. Garnish with green onions and parsley.
