- 2 celery stalks (chopped)

- 2 tbsp Cajun seasoning
- 2 bay leaves

- 0.25 cup green onions (chopped, for garnish)

Instructions
- Prepare the Roux: In a heavy pot, combine the flour and vegetable oil. Stir constantly over medium heat for 25-30 minutes until the roux is a rich, dark brown.
- Sauté Vegetables and Meat: Add the onion, bell pepper, and celery. Cook until softened. Add garlic, sausage, and chicken. Brown the meat and season with Cajun seasoning, bay leaves, Worcestershire sauce, salt, and pepper.
- Add Broth and Simmer: Slowly stir in chicken stock. Bring to a boil, then simmer for 45-60 minutes.
- Serve: Remove bay leaves and ladle gumbo over rice. Garnish with green onions and parsley.
