Meatloaf:
- 2 lbs ground beef (85% lean)
- 1 medium onion, finely chopped
- 2 large eggs
- 3 cloves garlic, minced
- 3/4 cup ketchup, divided
- 3/4 cup Panko breadcrumbs
- 1/3 cup milk
- Salt, to taste
- Pepper, to taste
- Italian seasoning, to taste
Glaze:
- 1/4 cup ketchup
- 2 tbsp vinegar
- 2 tbsp brown sugar
Instructions
- Preheat Oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Sauté Onions: In a pan, sauté chopped onions in olive oil over medium heat until softened, about 5-7 minutes.
- Mix Ingredients: In a large bowl, combine ground beef, sautéed onions, eggs, garlic, breadcrumbs, milk, salt, pepper, and Italian seasoning; mix until just combined.
- Shape and Bake: Shape the mixture into a loaf on the prepared baking sheet and bake uncovered for 40 minutes.
- Prepare Glaze: Mix remaining ketchup with vinegar and brown sugar for the glaze.
- Glaze and Bake Again: After initial baking time, spread the glaze over the meatloaf and return to the oven for an additional 20 minutes or until it reaches an internal temperature of 160°F.
- Rest and Serve: Let the meatloaf rest for 10-15 minutes before slicing and serving.
