Description

Meatloaf:

  • 2 lbs ground beef (85% lean)
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 3 cloves garlic, minced
  • 3/4 cup ketchup, divided
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • Salt, to taste
  • Pepper, to taste
  • Italian seasoning, to taste

Glaze:

  • 1/4 cup ketchup
  • 2 tbsp vinegar
  • 2 tbsp brown sugar

Instructions

  1. Preheat Oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Sauté Onions: In a pan, sauté chopped onions in olive oil over medium heat until softened, about 5-7 minutes.
  3. Mix Ingredients: In a large bowl, combine ground beef, sautéed onions, eggs, garlic, breadcrumbs, milk, salt, pepper, and Italian seasoning; mix until just combined.
  4. Shape and Bake: Shape the mixture into a loaf on the prepared baking sheet and bake uncovered for 40 minutes.
  5. Prepare Glaze: Mix remaining ketchup with vinegar and brown sugar for the glaze.
  6. Glaze and Bake Again: After initial baking time, spread the glaze over the meatloaf and return to the oven for an additional 20 minutes or until it reaches an internal temperature of 160°F.
  7. Rest and Serve: Let the meatloaf rest for 10-15 minutes before slicing and serving.

Notes
