Coffee Truffles:

  • 4 oz cream cheese or coconut butter
  • 2 tbsp butter, or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • 1/2 tsp instant coffee
  • 3 oz chocolate chips or broken up chocolate, (optional)

Instructions

  1. Prep Ingredients: Bring the cream cheese and butter to room temperature if not already soft. Combine all ingredients until smooth using a hand mixer for best results or stirring with a fork if a mixer is not available.
  2. Form Truffles: Spread the mixture into a container or freeze briefly until firm enough to scoop into balls using a mini cookie scoop. Place the truffle balls on a parchment-lined plate and freeze until firm.
  3. Optional Chocolate Coating: If desired, dip the truffles in melted chocolate. For a smoother chocolate sauce, mix half a teaspoon of oil into the melted chocolate before dipping the truffles.
  4. Serve: For smaller bites, cut the truffles in half once the chocolate coating sets. Enjoy immediately or store leftovers in the refrigerator or freezer.
