Ingredients

Scale

Main Dish:

  • 32 oz (900 g) frozen shredded hash browns
  • 2 cups (200 g) sharp cheddar cheese, shredded
  • 1 cup (100 g) mild mozzarella cheese, shredded
  • 1 cup (240 ml) sour cream
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1/4 cup (60 g) unsalted butter, melted
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Topping:

  • 3 cups (90 g) cornflakes cereal, crushed
  • 1/4 cup chopped green onions or chives (optional)
  • 1/4 cup (25 g) Parmesan cheese, grated (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Thaw Hash Browns: If hash browns are frozen, thaw completely by refrigerating overnight or spreading on paper towels for about 30 minutes to remove excess moisture.
  3. Mix Potato Mixture: In a large bowl, combine thawed hash browns, sour cream, cream of chicken soup, melted butter, onion powder, garlic powder, salt, and pepper. Gently stir until coated.
  4. Add Cheese: Fold in shredded cheddar and mozzarella cheeses, reserving some for topping if desired.
  5. Layering: Spread the potato mixture in a baking dish.
  6. Prepare Topping: Mix crushed cornflakes with Parmesan and reserved cheese. Drizzle melted butter, toss, and sprinkle over potatoes.
  7. Bake: Bake uncovered for 45-55 minutes until bubbly and golden brown. Tent with foil if needed.
  8. Rest and Serve: Let it rest for 10 minutes before serving. Garnish with green onions or chives.

Notes

  • For a crispy topping, crush the cornflakes coarsely.
  • You can customize by adding diced ham or bacon to the mix.
