Main Soup:

  • 1 Large Sweet Onion, Peeled & Chopped
  • 3 Garlic Cloves, Peeled & Chopped
  • 2 Teaspoons Olive Oil
  • 2 Pounds Sweet Potatoes, Peeled & Diced
  • 2-inch Piece Fresh Ginger, Peeled & Chopped
  • 4 Cups Low Sodium Chicken Broth
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Ground Cumin
  • 1 Teaspoon Smoked Paprika
  • 1/23/4 Teaspoon Ancho Chili Powder
  • Salt & Pepper To Taste
  • 1 Cup Half & Half

Crouton Garnish:

  • 2 Cups Diced Multigrain Bread (Cut Into 1/2 Inch Pieces)
  • 1 Teaspoon Olive Oil
  • Cracked Black Pepper

Instructions

  1. Saute Aromatics: In a heavy stock pot, heat olive oil, and saute onions until translucent. Add garlic and ginger, cook until fragrant.
  2. Cook Potatoes: Add sweet potatoes, chicken broth, spices, and simmer until potatoes are soft.
  3. Blend: Use a blender to puree the soup until smooth.
  4. Add Cream: Stir in half & half, simmer, and season with salt and pepper.
  5. Prepare Garnish: In a pan, toast croutons with olive oil and black pepper until golden.
