Main Soup:
- 1 Large Sweet Onion, Peeled & Chopped
- 3 Garlic Cloves, Peeled & Chopped
- 2 Teaspoons Olive Oil
- 2 Pounds Sweet Potatoes, Peeled & Diced
- 2-inch Piece Fresh Ginger, Peeled & Chopped
- 4 Cups Low Sodium Chicken Broth
- 1/2 Teaspoon Ground Cinnamon
- 1/2 Teaspoon Ground Cumin
- 1 Teaspoon Smoked Paprika
- 1/2 – 3/4 Teaspoon Ancho Chili Powder
- Salt & Pepper To Taste
- 1 Cup Half & Half
Crouton Garnish:
- 2 Cups Diced Multigrain Bread (Cut Into 1/2 Inch Pieces)
- 1 Teaspoon Olive Oil
- Cracked Black Pepper
Instructions
- Saute Aromatics: In a heavy stock pot, heat olive oil, and saute onions until translucent. Add garlic and ginger, cook until fragrant.
- Cook Potatoes: Add sweet potatoes, chicken broth, spices, and simmer until potatoes are soft.
- Blend: Use a blender to puree the soup until smooth.
- Add Cream: Stir in half & half, simmer, and season with salt and pepper.
- Prepare Garnish: In a pan, toast croutons with olive oil and black pepper until golden.
