  • 2 tablespoons olive oil
  • 1 large yellow onion (diced)
  • 4 large cloves garlic (minced)
  • Kosher salt
  • 1 pound lean ground beef (94% lean)

Spices and Seasonings:

  • ¼ cup chili powder
  • 1½ tablespoons dried oregano
  • 1 tablespoon sugar

Additional Ingredients:

  • 2 14.5-ounce cans fire roasted tomatoes with their juices
  • 2 cups low-sodium beef broth or Better than bouillon beef
  • 1 12-ounce jar roasted red bell pepper, drained and chopped
  • 12 (4-ounce cans diced green chiles)
  • 2 15-ounce cans kidney beans, drained and rinsed

Instructions

  1. Heat the Olive Oil and Onion: In a large pot, heat olive oil, add diced onion and salt, cook until softened.
  2. Cook Beef and Spices: Add garlic, ground beef, salt, cook until beef is almost cooked. Stir in chili powder, oregano, and sugar.
  3. Add Tomatoes and Broth: Mix in fire roasted tomatoes, beef broth, red peppers, and green chiles. Bring to a boil, then simmer.
  4. Include Beans: Stir in kidney beans, simmer gently. Season with salt if needed.
  5. Serve: Top with sour cream, cheese, cilantro, and tortilla chips. Serve warm.
