Ingredients

Scale

Cupcake Batter:

  • 1½ cups gluten-free flour
  • ¾ cup + 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup coconut milk (from a can, well shaken)
  • ¼ cup + 3 tbsp neutral oil
  • 2 tsp vanilla extract
  • 2 tbsp lime zest
  • ½ cup shredded coconut

Frosting:

  • 1 cup vegan butter (cold)
  • 1 tsp vanilla extract
  • 3½4 cups powdered sugar
  • Optional: lime zest, shredded coconut, coconut milk, or lime juice

Instructions

  1. Preheat the oven: to 350°F and line a muffin tin with cupcake liners.
  2. Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, and salt. Add coconut milk, oil, and vanilla extract. Mix until just combined. Stir in lime zest and shredded coconut.
  3. Fill cupcake liners: Pour batter evenly into liners, filling each about 2/3 – ¾ full.
