For the crust
- 1 cup flour
- 1/2 cup butter (1 stick), softened
- 1 egg yolk
- 2 Tbls. sugar
For the cheesecake filling
- 1 lb. cream cheese
- 1 Tbls. flour
- 1/2 cup sugar
- 4 eggs, separated
- 4 Tbls. sour cream
- 4 Tbls. heavy cream
- 1 tsp. vanilla
Instructions
- Make the dough for the cheesecake crust – Combine softened butter and flour in a mixer. Add sugar and egg yolk. Mix until smooth.
- Bake the bottom crust of the cheesecake – Press one-third of the dough into a springform pan. Bake at 400 degrees for 8 minutes.
- Start the cheesecake filling – Beat cream cheese and sugar until smooth. Add egg yolks, sour cream, heavy cream, and vanilla. Mix until well combined.
- Finish the cheesecake crust – Press the remaining dough on top of the baked crust in the pan.

- Ensure all ingredients are at room temperature for best results.
- Be careful not to overmix the cheesecake filling to avoid air bubbles.
- Adjust sugar to taste depending on the sweetness desired.
