Description

For the crust

  • 1 cup flour
  • 1/2 cup butter (1 stick), softened
  • 1 egg yolk
  • 2 Tbls. sugar

For the cheesecake filling

  • 1 lb. cream cheese
  • 1 Tbls. flour
  • 1/2 cup sugar
  • 4 eggs, separated
  • 4 Tbls. sour cream
  • 4 Tbls. heavy cream
  • 1 tsp. vanilla

Instructions

  1. Make the dough for the cheesecake crust – Combine softened butter and flour in a mixer. Add sugar and egg yolk. Mix until smooth.
  2. Bake the bottom crust of the cheesecake – Press one-third of the dough into a springform pan. Bake at 400 degrees for 8 minutes.
  3. Start the cheesecake filling – Beat cream cheese and sugar until smooth. Add egg yolks, sour cream, heavy cream, and vanilla. Mix until well combined.
  4. Finish the cheesecake crust – Press the remaining dough on top of the baked crust in the pan.
