  • 8 eggs
  • ¼ cup whole milk or ½ and ½
  • ½ teaspoon Kosher salt
  • A few turns cracked pepper

Frittata Filling:

  • 2 Tablespoons salted butter
  • 2 leeks (light green and white pieces only, rinsed and sliced thin)
  • ¾ cup diced ham
  • ½ cup shredded sharp cheddar cheese
  • ½ cup shredded Swiss cheese

Instructions

  1. Preheat the oven: To 400 degrees.
  2. Prepare egg mixture: Whisk together eggs, milk, salt, and pepper until no thick white streaks remain.
  3. Saute leeks: Melt butter in a cast iron skillet, add leeks, and sauté until softened.
  4. Assemble frittata: Layer ham, cheeses, and pour eggs over the mixture in the skillet. Sprinkle with remaining cheese.
  5. Bake: Transfer skillet to the oven and bake for 9-11 minutes until set. Serve warm.
