- 8 cups chopped romaine lettuce
- 1 cup (150g) cherry tomatoes, halved
- 1 cup (150g) cucumber, diced
- 1/2 cup (50g) red onion, thinly sliced
- 1 cup (160g) corn kernels (fresh or frozen)
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup (60ml) light vinaigrette dressing

Instructions
- Prepare the Chicken – Preheat grill. Combine chicken with olive oil, BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Grill until cooked.
- Grill the Chicken – Grill chicken until fully cooked. Rest and chop/shred into pieces.
- Prepare the Salad Base – Combine romaine lettuce, tomatoes, cucumber, red onion, and corn in a bowl.
- Assemble the Salad – Add chopped BBQ chicken to the salad base. Toss gently.
- Add Avocado and Cilantro – Include diced avocado and cilantro.
