Description

This Healthy BBQ Chicken Chopped Salad is a delicious and nutritious meal packed with flavor. Tender grilled chicken coated in BBQ sauce served on a bed of fresh vegetables, avocado, and cilantro, all tossed in a light vinaigrette dressing.

    For the BBQ Chicken:

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1/2 cup (120ml) BBQ sauce (ensure permissible ingredients)
  • 1 tbsp (15ml) olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • For the Salad:

  • 8 cups chopped romaine lettuce
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cup (150g) cucumber, diced
  • 1/2 cup (50g) red onion, thinly sliced
  • 1 cup (160g) corn kernels (fresh or frozen)
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup (60ml) light vinaigrette dressing

Instructions

  1. Prepare the Chicken – Preheat grill. Combine chicken with olive oil, BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Grill until cooked.
  2. Grill the Chicken – Grill chicken until fully cooked. Rest and chop/shred into pieces.
  3. Prepare the Salad Base – Combine romaine lettuce, tomatoes, cucumber, red onion, and corn in a bowl.
  4. Assemble the Salad – Add chopped BBQ chicken to the salad base. Toss gently.
  5. Add Avocado and Cilantro – Include diced avocado and cilantro.
  6. Dress the Salad – Drizzle with vinaigrette dressing before serving. Toss to combine.
