Ingredients

Scale

For the Chili:

  • 1 lb ground beef (lean)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cans (14.5 oz each) diced tomatoes (fire-roasted preferred)

  1. Prep your ingredients: Chop onions and mince garlic.
  2. Heat olive oil in a large pot over medium heat; sauté onions until golden, about 5 minutes. Add minced garlic.
  3. Brown the ground beef in the pot for about 7 minutes until no longer pink; drain excess fat if needed.
  4. Stir in canned tomatoes and kidney beans with their juices.
  5. Add chili powder and cumin; mix well and let spices mingle for a minute.
  6. Pour in beef broth; bring to a gentle boil, then reduce heat and simmer uncovered for at least 30 minutes, stirring occasionally.
