Cookies:

  • ½ cup unsalted butter (113g), softened to room temperature
  • 1 large egg, room temperature
  • ¾ cup sugar (150g)
  • ¼ cup light brown sugar (50g)
  • 1 tsp vanilla extract
  • 23 tsp key lime zest
  • 1 ¾ cup flour (219g)
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Lime Glaze:

  • 1 cup powdered sugar
  • 1 Tbsp key lime juice
  • 12 Tbsp milk
  • ¼ tsp vanilla
  • ½ tsp key lime zest
  • Pinch of salt (optional)

Instructions

  1. For The Cookies: Preheat oven to 350°F. Whisk together flour, salt, and baking soda. Cream butter, brown sugar, and sugar until light and fluffy. Add egg, vanilla, and lime zest. Gradually add flour mixture. Form dough into balls and bake.
  2. For The Lime Glaze: Whisk together powdered sugar, lime juice, milk, vanilla, key lime zest, and salt. Dip cookies in glaze or spread over the top.
  3. Allow the glaze to set before serving. Store cookies in an airtight container.

Notes

  • You can adjust the amount of key lime zest for a stronger or milder lime flavor.
  • For a tropical twist, add shredded coconut to the cookie dough.
