For the Mango Blend:

  • 1 cup almond milk or coconut milk
  • 1 cup fresh chopped mango
  • 12 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 pinch of salt

Additional Ingredients:

  • ¼ cup chia seeds

Instructions

  1. Blend Mango Mixture: In a blender, combine almond or coconut milk, chopped mango, maple syrup, vanilla extract, and salt. Blend until smooth.
  2. Mix Chia Seeds: In a large bowl, whisk together the mango blend from step 1 with chia seeds until well combined.
  3. Chill Overnight: Cover the bowl with chia pudding and refrigerate overnight, or for at least 4 hours. Stir once more before serving. Add extra milk if desired for a thinner consistency.
  4. Serve: Top the chilled chia pudding with your favorite toppings such as fresh fruit, coconut flakes, or granola. Enjoy!
