  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. Combine: the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract in a large mixing bowl.
  2. Mix: thoroughly until all ingredients come together seamlessly.
  3. If needed: add unsweetened almond milk 1 tablespoon at a time until you achieve your desired consistency.
  4. Fold: in the mini dark chocolate chips until evenly distributed.
  5. Scoop: out portions with a tablespoon and roll into balls.
  6. Place: the balls on a baking sheet lined with parchment paper.
  7. Refrigerate: for at least 20 minutes to firm up.
  8. Serve: and store in an airtight container in the refrigerator for up to a week.
