- 1/2 cup (50g) rolled oats
- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 cup (30g) vanilla protein powder
- 1/4 tsp peppermint extract
- 1/4 cup (40g) mini dark chocolate chips
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
Instructions
- Combine: the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract in a large mixing bowl.
- Mix: thoroughly until all ingredients come together seamlessly.
- If needed: add unsweetened almond milk 1 tablespoon at a time until you achieve your desired consistency.
- Fold: in the mini dark chocolate chips until evenly distributed.
- Scoop: out portions with a tablespoon and roll into balls.
- Place: the balls on a baking sheet lined with parchment paper.
- Refrigerate: for at least 20 minutes to firm up.
- Serve: and store in an airtight container in the refrigerator for up to a week.
