Description

Upgrade your frozen dumplings with this delicious potsticker salad filled with umami flavor, juicy tomatoes, and crisp cucumbers. A refreshing and satisfying dish perfect for any day of the week.


Ingredients

Gyoza Dumplings:

  • 1 lb frozen gyoza dumplings (vegan)

Salad:

  • 1 lb mixed heirloom tomatoes (various colors)
  • 1 English cucumber or 4 Persian cucumbers
  • 5 scallions, thinly sliced
  • 1 red chili pepper (optional for heat)
  • 1/2 cup basil leaves

Dressing:

  • 3 Tbsp low-sodium Tamari
  • 2 Tbsp balsamic vinegar
  • 23 tsp maple syrup

Garnish:

  • 1 Tbsp toasted sesame seeds or crispy fried onions

Optional Add-Ins:

  • thinly sliced cabbage, carrot, bean sprouts, edamame

Instructions

  1. Steam the Dumplings: Cook gyoza dumplings according to package instructions. Transfer to a large bowl with a teaspoon of sesame oil to prevent sticking (or use a splash of water).
  2. Prepare Dressing: Combine Tamari, balsamic vinegar, and maple syrup. Pour over dumplings and toss to coat.
  3. Assemble Salad: Cut tomatoes into wedges, slice cucumbers and scallions. Add to the bowl with dumplings, along with chili pepper. Mix gently.
  4. Finish and Serve: Tear basil leaves over the top, sprinkle with sesame seeds or crispy onions. Serve at room temperature, adding optional veggies and garlic chili sauce as desired.

Notes

  • Feel free to customize the salad with additional vegetables.
  • Adjust the heat level by adding more or less chili pepper or garlic chili sauce.
