Description

These Queso Chicken Enchiladas are a quick and cheesy dinner delight that’s perfect for a comforting meal with a kick of flavor. Filled with a creamy chicken mixture and topped with a velvety queso blanco sauce, these enchiladas are sure to become a family favorite.

Ingredients

Scale

For the Enchiladas:

  • 4 tortillas burrito size flour tortillas (Corn tortillas can also be used, just warm them first.)
  • 2 cups shredded chicken (Rotisserie chicken works fabulously for faster prep!)
  • 1 packet taco seasoning (Feel free to use homemade or store-bought.)
  • 1 cup sour cream (Greek yogurt is a healthier substitute if desired.)
  • 1 cup shredded cheddar cheese (Mix in Monterey Jack for extra creaminess.)
  • 1 can chopped green chilies (Adjust quantity based on heat preference.)
  • 1 can diced tomatoes with green chilies (Undrained for moisture.)

For the Queso Sauce:

  • 16 oz Queso Blanco Velveeta (Melts beautifully to create a creamy sauce.)

Instructions

  1. In a large mixing bowl, combine shredded chicken, taco seasoning, sour cream, cheddar cheese, and chopped green chilies. Stir until well mixed and coated. This forms the flavorful filling for the enchiladas.
  2. In a medium saucepan, melt cubed Velveeta queso along with the undrained diced tomatoes over medium-high heat, stirring continuously until smooth. This creates the creamy queso sauce.
  3. Lay out tortillas on a clean surface. Spoon ½ to ¾ cup of filling onto each tortilla, roll tightly, and place seam-side down in a greased baking dish. This prepares the enchiladas for baking.
  4. Evenly pour the queso sauce over the assembled enchiladas, ensuring each one is covered. This coats the enchiladas with the delicious queso sauce.
  5. Preheat oven to 350°F (175°C). Bake for 20–25 minutes until heated through and the sauce is bubbly. This bakes the enchiladas to perfection.
  6. Remove from oven, let cool slightly, and serve hot with sides like Spanish rice or a crisp salad. Enjoy your delicious Queso Chicken Enchiladas!
