  • 2 teaspoons soy sauce
  • 1 tablespoon sake
  • 0.25 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 tablespoon mirin
  • 1 tablespoon brown sugar
  • 1 tablespoon oil
  • 1 tablespoon minced garlic

Additional:

  • 1 sheet nori (cut into small rectangles)

Instructions

  1. Prepare the Rice: Cook sushi rice with a bit more water than usual, then mix with salt and furikake.
  2. Marinate the Chicken: Marinate chicken in soy sauce, sake, baking soda, and cornstarch for 30 minutes.
  3. Prepare the Sauce: Whisk together soy sauce, mirin, and brown sugar.
  4. Cook the Chicken: Sauté marinated chicken until browned, then add garlic and sauce.
  5. Shape the Onigiri: Press rice into palm, add chicken filling, mold into triangles, and wrap with nori.

Notes
