Description

  • 5 tbsp cider vinegar
  • 2 1/2 tsp mustard
  • 1/2 tsp garlic
  • 1 1/2 tbsp honey
  • 1 tsp salt
  • 1 shallot
  • 1 strawberry

For the salad

  • 4 cups spinach
  • 3 cups romaine
  • 1/2 cup feta (crumbled from a block)
  • 1/4 cup slivered almonds (toasted)
  • 1/2 red onion (thinly sliced)
  • 2 cups strawberries

Instructions

  1. Toasted Almonds: Heat a dry skillet and toast almonds until golden. Set aside to cool. Prep garlic, shallot, and strawberries.
  2. Make the Dressing: Blend olive oil, cider vinegar, mustard, garlic, shallot, diced strawberry, honey, and salt until emulsified.
  3. Prepare Greens: Rinse and dry romaine and spinach thoroughly. Tear into bite-sized pieces and place in a bowl.
  4. Assemble Salad: Divide greens onto plates, top with feta, red onion, strawberries, and toasted almonds. Drizzle with dressing before serving.
