- 1 shallot
- 1 strawberry
For the salad
- 4 cups spinach
- 3 cups romaine
- 1/2 cup feta (crumbled from a block)
- 1/4 cup slivered almonds (toasted)
- 1/2 red onion (thinly sliced)
- 2 cups strawberries
Instructions
- Toasted Almonds: Heat a dry skillet and toast almonds until golden. Set aside to cool. Prep garlic, shallot, and strawberries.
- Make the Dressing: Blend olive oil, cider vinegar, mustard, garlic, shallot, diced strawberry, honey, and salt until emulsified.
- Prepare Greens: Rinse and dry romaine and spinach thoroughly. Tear into bite-sized pieces and place in a bowl.
- Assemble Salad: Divide greens onto plates, top with feta, red onion, strawberries, and toasted almonds. Drizzle with dressing before serving.
