For the Salad:
- 2 cups shredded rotisserie chicken
- 1 can black beans, drained and rinsed
- 1 can sweet corn, drained (frozen thawed corn can be used instead)
- 1 small red bell pepper
- 1 small green bell pepper
- 1 jalapeño, seeded and diced
- 4 green onions, diced (green and white parts)
- 1/4 cup cilantro, chopped
For the Dressing:
- 1/2 cup greek yogurt
- 1/3 cup mayonnaise
- 1 lime, juice and zest of
- 2 tablespoons chipotle adobo sauce
- 2 teaspoons honey
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp each salt and freshly cracked pepper
Instructions
- Make the dressing: Combine greek yogurt, mayonnaise, lime juice and zest, chipotle adobo sauce, honey, and seasonings. Mix well and adjust to taste.
- Prepare the salad: In a large mixing bowl, combine shredded chicken, black beans, sweet corn, bell peppers, jalapeño, green onions, and cilantro.
- Toss with dressing: Pour the dressing over the salad ingredients and toss until well coated. Refrigerate until ready to serve.
