Description

Boil:

  • Salt
  • 4 ears corn (husked and snapped into 3-inch pieces)
  • 14 oz andouille sausage (sliced into 1-inch thick rounds)
  • 1.5 lb shrimp (I use Home Market frozen deveined shrimp)

Finish:

  • 8 tbsp butter (I prefer Kerrygold unsalted butter for this)
  • 2 tbsp lemon juice
  • 2 tbsp parsley
  • Black pepper
  • 1/2 tsp cayenne pepper

Instructions

  1. Prepare the Broth: In a large pot, combine water, onion, garlic, old bay seasoning, and thyme. Bring to a boil and let simmer for 10-15 minutes to infuse flavors.
  2. Boil the Ingredients: Add potatoes to the broth and season with salt. Cook for about 10 minutes, then add corn, sausage, and shrimp. Cook until potatoes are tender and shrimp turn pink, about 5-7 minutes.
  3. Finish and Serve: Stir in butter, lemon juice, parsley, black pepper, and cayenne pepper. Adjust seasoning as needed. Serve hot, garnished with additional parsley if desired.

  • You can customize the spice level by adjusting the amount of cayenne pepper used.
