Wet Ingredients:
- 1 1/2 Cups Ripe, Mashed Bananas
- 2/3 Cup Light Flavored Oil
- 1 Cup Light Brown Sugar
- 1 Teaspoon Vanilla Extract
- 2 Large Eggs At Room Temperature
Dry Ingredients:
- 1 Cup Sprouted Wheat Flour
- 1 Cup All-purpose Flour
- 1 1/2 Teaspoons Baking Powder
- Pinch of Salt
- 1/2 Teaspoon Baking Soda
- 1 Cup Dark Chocolate Chips or Chunks
Instructions
- Preheat Oven: Preheat oven to 350 degrees F and line a muffin tin with papers.
- Mix Wet Ingredients: In a large bowl, whisk together mashed bananas, oil, brown sugar, vanilla extract, and eggs until well combined.
- Combine Dry Ingredients: In another bowl, mix sprouted wheat flour, all-purpose flour, baking powder, salt, and baking soda.
- Combine Wet and Dry Ingredients: Add the dry ingredients to the wet ingredients and stir just until mixed.
- Add Chocolate: Gently fold in the dark chocolate chips or chunks.
- Bake: Spoon the batter into the muffin cups and bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
