These Starbucks Lime Frosted Coconut Bars Copycat are a delightful treat that perfectly balances the flavors of coconut and lime. A soft coconut bar topped with a zesty lime frosting and a drizzle of white chocolate – a taste of paradise in every bite!

For the Coconut Bars:
- 1/2 cup butter (softened, salted or unsalted)
- 2/3 cup brown sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 1/4 tsp coconut extract
- 1 & 1/4 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup shredded coconut (extra for topping)
- 1/3 cup white chocolate chips (mini if possible)
For the Lime Frosting:
- 1/2 cup butter (at room temperature)
- 1/2 tsp lime extract
- 1 & 1/2 cup powdered sugar
- 1 tbsp heavy cream (or milk)
- 2 tbsp lime juice
- food coloring
- 2 tbsp white chocolate (for drizzling, melted)
Instructions
- Preheat the oven: Preheat the oven to 350F and line an 8×8 baking pan with parchment paper.
- Cream the butter and sugar: Cream together the butter and brown sugar, then add the egg, vanilla extract, and coconut extract.
- Combine dry ingredients: Fold in the flour, baking powder, salt, and shredded coconut. Add the chocolate chips and spread the batter in the pan.
- Bake: Bake for 15-16 minutes until golden. Let cool.
- Make the lime frosting: Whip butter, powdered sugar, milk, lime juice, and lime extract until fluffy. Add food coloring.
- Frost the bars: Frost the cooled bars and drizzle with melted white chocolate.
- Serve: Sprinkle with coconut, slice, and enjoy!
- Chill (optional): Chill in the fridge if preferred.
Notes
- For a more intense lime flavor, add extra lime zest to the frosting.
