For the Crust and Crumble Topping:
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/2 teaspoon salt (or to taste)
For the Strawberry Layer:
- 2 cups coarsely chopped fresh strawberries
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Crust and Crumble Topping: Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside. In a large, microwave-safe bowl, melt the butter. Add the flour, oats, sugars, and salt, and stir to combine. Set aside 1 cup for topping. Press the rest into the pan to form a crust.
- Strawberry Layer: In the same bowl, combine all the strawberry layer ingredients. Spread over the crust. Sprinkle with the reserved topping. Bake for about 50 minutes until set. Cool before slicing.
Notes
- Make sure to let the bars cool completely before slicing to ensure they hold together well.
- You can serve these bars warm with a scoop of vanilla ice cream for a delicious dessert.
