Description

These Strawberry Oatmeal Crumble Bars are a delightful combination of buttery oatmeal crust, sweet strawberry filling, and crumbly topping. Perfect for a sweet treat or a light snack!

For the Crust and Crumble Topping:

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon salt (or to taste)

For the Strawberry Layer:

  • 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Crust and Crumble Topping: Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside. In a large, microwave-safe bowl, melt the butter. Add the flour, oats, sugars, and salt, and stir to combine. Set aside 1 cup for topping. Press the rest into the pan to form a crust.
  2. Strawberry Layer: In the same bowl, combine all the strawberry layer ingredients. Spread over the crust. Sprinkle with the reserved topping. Bake for about 50 minutes until set. Cool before slicing.

Notes
