  • 1/2 cup cashews (soaked in hot water for 30 minutes)
  • 7 tbsp coconut milk
  • 2 1/2 tbsp maple syrup
  • 1/4 cup key lime juice
  • zest of 3 key limes
  • 1/2 tsp matcha powder

Instructions

  1. Prepare Chia Seed Pudding: In a bowl, mix chia seeds, almond milk, key lime zest, maple syrup, vanilla essence, and sea salt. Stir well, cover, and refrigerate for at least 4 hours or overnight.
  2. Make Lime Coconut Cream: Blend soaked cashews, coconut milk, maple syrup, key lime juice, lime zest, and matcha powder until smooth.
  3. Assemble: In serving glasses, layer the chia seed pudding and lime coconut cream alternately. Top with additional lime zest for garnish.
