Coconut Cream Filling:

- 1 ½ cups powdered sugar
- 2 tbsp coconut cream (or heavy cream with ½ tsp coconut extract)
- 1 tsp vanilla extract
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Mix the Dry Ingredients: Whisk flour, baking powder, and salt in a bowl.
- Cream the Butter and Sugar: Beat butter and sugar until fluffy. Add eggs one at a time.
- Add the Ube Flavor: Mix in ube halaya, vanilla extract, and food coloring.
- Chill the Dough: Refrigerate the dough for at least 1 hour.
- Roll and Coat: Shape dough into balls, coat in powdered sugar, and place on baking sheets.
- Bake the Cookies: Bake for 12–15 minutes, then cool on a wire rack.
- Whip the Butter: Beat softened butter until creamy.
- Add the Sugar: Gradually mix in powdered sugar.
- Add the Coconut Cream: Stir in coconut cream and vanilla until smooth.
- Pair and Fill: Sandwich cookies with coconut cream filling.
- Dust with Powdered Sugar: Dust assembled cookies with powdered sugar.
Notes
- You can adjust the amount of ube extract or food coloring for a more intense purple color.
- Ensure cookies are completely cooled before filling to prevent melting of the cream.
