- 1/4 to 1/3 Cup Organic Honey
- 1 Teaspoon Vanilla Extract

For Topping:
- Additional Dried Apricots for Garnish
- Additional Honey for Drizzling

- Prepare the Panna Cotta: In a small bowl, sprinkle gelatin over 3 tablespoons of milk and allow it to soften for 5 minutes.
- Heat the Milk Mixture: In a saucepan, heat 1 cup of milk until simmering. Add vanilla and 1/4 cup of honey. Taste and adjust sweetness with more honey if desired.
- Combine Ingredients: Whisk in the softened gelatin until fully melted. Stir in the Greek yogurt until well combined.
- Chill: Pour the mixture into ramekins or glasses and refrigerate for at least 3-4 hours to set.
- Make the Apricot Topping: In a saucepan, cook chopped apricots with honey and wine until soft and syrupy. Cool the mixture.
- Serve: Top each set panna cotta with the apricot mixture before serving.
